Sugar Parsley Root is a mid-season variety, with 97–105 days from germination to root maturity. A biennial crop. The root is conical, white, 20–30 cm long, and weighs 30–60 g. Good flavor, sweetish taste of the roots, aromatic leaves. Root yield is 1.2–2.5 kg/m². When sown before winter, an extra-early harvest is obtained. The roots and leaves are used fresh, dried, and salted.
