Leek — a mid-early variety with a growing season of 135–150 days. The plant forms long, flat green leaves and a thickened stem (“white shank”) 15–30 cm long. It is noted for its ability to accumulate vitamin C during storage. The harvested crop is stored buried in moist sand in an upright position throughout the winter. It requires abundant watering during hot, dry weather. Recommended for use in the fall and winter—fresh or dried—as well as in home cooking.
