Berlin Sugar Parsley Root - a late-maturing variety; the growing season until fruit ripening is 140–180 days. The root is conical, white, 22 cm long, and weighs 110 g. The leaves are dark green and glossy on long petioles. The flesh is white, tender, and aromatic. This parsley variety is distinguished by its high content of sugars, vitamins—especially C (up to 300 mg%), provitamin A (up to 20 mg%), and mineral salts such as potassium (up to 1080 mg%), sodium (330 mg%), calcium (325 mg%), as well as magnesium, iron, and phosphorus. Excellent flavor. Stores well in winter. Root yield is 2.0–2.3 kg/m2. Good shelf life during winter storage. The roots and leaves are used fresh, dried, and salted, as well as for seasoning.
